Indigenous to India and southern Asia is the special clay oven
known as the Tandoori oven. Traditionally the tandoori
oven is
made of clay, simply air dried, and embedded in sand or earth.
A charcoal or wood fire in the bottom of the tandoor heats the
sides for cooking. Due to the fragile nature of air dried clay,
the traditional tandoor was subjected to great stress during the
heating and cooking process resulting in cracks and damage in shipping.
The NEW tandoori ovens presented here were developed by Ron Levy,
a noted ceramist and perhaps the leading authority in the USA on
the design and manufacturing of tandoors. These tandoors represent
years of clay composition and manufacturing research.
